Italian Winter Black Truffle - Melanosporum
The Italian winter black truffle also known as Perigord truffle, Tartufo nero di Norcia (Tuber melanosporum) is one of the most intensely flavoured truffles, with a strong and pungent taste and fragrance. It is one of the most demanded truffle in fine dining and appreciated all around the world.
The skin is black-brown, with small cusps in the surface and rough to the touch. The flesh starts with a lighter black shade and as it matures during the season becomes more dark and intense. Its peridium is slightly reddish.
On the nose:
The smell is strong and aromatic with undergrowth, strawberries, wet earth or dried fruit with a hint of cocoa.
On the palate
Very earthy, recommended to be lightly cooked, when all the flavours develop to deep peppery and slightly bitter. It really is the king of the truffles once cooked, this is widely appreciate in haute cuisine worldwide.
Around 15 - 20gm per person.

Due to the nature of the product, we will try to match your piece size preference. However, since is a wild natural product we will match smaller pieces for a total weight if we are unable to find a whole piece. If the whole size piece or combination thereof exceeds the weight will offer the bigger piece/s, if preferred, by contacting you and integrating the price based on your initial average price per gram.
